Fried Nanban Chicken

A very popular chicken dish from Miyazaki, Japan.

Ingredients

Chicken thighs 300g
Salt & pepper as required
Flour as required
Eggs 2
Sweet & sour sauce:
Vinegar 200ml
Sugar 100g
Soy sauce 100ml
Mirin 20ml
Chicken stock granules a pinch
Salt 2g
Tartare sauce:
Onion 1/4
Hard boiled egg 1
Mayonnaise 100g
Gherkin (medium) 1
Parsley as you like

Method

Season the chicken with salt & pepper and cut to bitesize pieces.

Put all the sweet and sour sauce ingredients in a pan and cook on low heat until combined. Turn off the heat and allow to cool.

Make the tartare sauce: finely chop the onions and rub with salt and soak in water. Drain and pat dry.

Separate the hard boiled egg yolk and white and finely chop each separately. Finely chop the gherkins and parsley.

Put Step 4 into a bowl and mix with the mayonnaise - the tartare sauce is ready.

Dredge the chicken with the flour and run through the beaten egg. Put into hot oil 180C.

Pour the remaining beaten egg over the chicken as it fries. Cook for 4-5 minutes then allow to cool.

Run the cooked chicken pieces through the sweet and sour sauce from Step 2.

Transfer to a serving dish alongside the tartare sauce.
