Baked Aubergine & Minced Pork Salad Vietnamese Style

A delicious far eastern ethnic style salad using fish sauce.

Serves 4

Ingredients

Aubergines 2
【Sauce】
Sesame oil as required
Minced pork 100g
Garlic 2 cloves
Fish sauce (nam pla) 2 tbsp
Honey 2 tbsp
Vinegar 2 tbsp
Pepper as required
Water 2 tbsp
Dried chilli 1
Red onion as required
Spring onion 1

Method

Put the aubergines in a lined oven tray and bake at 180C for 45 minutes until the skin browns and the inside is soft.

Leave aside until had hot then peel off the skin. Cut into 8 long strips each and put on a dish.

Make a meat sauce: put the sesame oil in a frying pan and fry the finely chopped garlic and minced pork on medium heat.

Add the fish sauce, honey, vinegar, pepper, water and chopped chilli when it's almost cooked. Mix together well to combine.

Pour Step 3 onto the aubergines.

Roughly chop the red onion and spring onions and scatter over the top.

Tips & Note

You could cook the aubergines on the flame or under a grill, but in the oven, you can leave them there for 45 minutes and get on with the rest of the recipe.
Aubergine and chilli are good friends, so make it nice and hot.
