Chinese Pork on Wheat Noodles (Zha Jiang Mian) with Natto

Ingredients

Natto 1 pack
Minced pork 100g
Spring onions 1/2 bunch
Garlic 1 tbsp
Chinese wheat noodles for 2 people
Dried shiitake mushroom 1
Miso (red) 1.5 tbsp
Soy sauce 1 tsp
Sugar 1 tbsp
Sake 2 tbsp
Mirin 1 tbsp
Chinese chilli bean sauce 1 tsp
Sesame oil 1 tbsp
Sea salt as required
Pepper as required

Method

Rehydrate the shiitake mushroom in warm water. Remove the stalk and finely chop. Mix together the miso and sake in a bowl.

Put the sesame oil in a frying pan and heat on medium. Add the minced pork and fry until browned and separate.

Boil the noodles and drain. Drizzle with sesame oil.

Add the finely chopped spring onions and garlic to the frying pan and fry.

Add all the remaining seasonings, the chopped mushrooms and natto and lightly mix. Season with salt & pepper and turn the heat off.

Put the noodles from Step 3 in a serving dish and cover with the sauce from Step 5. Garnish with fine strips of cucumber or spring onions before serving.
