Mushroom Peperoncino

So simple but incredibly tasty.

Ingredients

Brown mushrooms 250g
Garlic 2 cloves
Red chillis 1-2
Rocket a handful
Extra virgin olive oil 2 tbsp
Salt & pepper as required
Green leaf salad as required

Method

Smash one garlic clove and finely slice the other. Deseed the red chillis.

Wipe the mushrooms (don't wash them) and chop to bitesize pieces. Finely chop the parsley.

Put the olive oil in a frying pan on low heat and add the smashed garlic and chillis.

Fry slowly until the garlic browns, then remove it.

Add the mushrooms and the sliced garlic and turn the heat up to high. Add the rocket and salt & pepper. Mix well and turn the heat off.

Serve alongside the green leaf salad.

Tips & Note

●Use a large frying pan so that everything fries in one layer
