Arabiki Sausage In Home Made Bread Rolls

I discovered Arabiki sausages in a Japanese store in London.

Ingredients

Strong flour 320g
Granulated sugar 8g
Salt 7g
Melted butter 5g
Dried yeast 7g
Hand-hot water 170ml
Butter (for glazing) 1 knob
Arabiki sausages 10
Flour for dusting as required

Method

Keep the oven heated to 35C (for the dough to rise when the yeast is added).

In a bowl, put the flour, sugar, salt, butter, yeast and the water and knead thoroughly.

Put the dough into the oven to prove for 40 minutes.

The dough should now be 1.5 times the size. Punch the air out of the dough and knead it again.

Increase the oven temperature to 40C and put the dough back in for 20 minutes.

While waiting, boil the sausages for about 5 minutes.

Remove the dough from the oven and increase the oven temperature to 220C.

Divide the dough into 10 balls and roll into small ovals, about 10cm long.

Place one sausage in the centre and cover with the dough, bringing the two sides to the top. Twist slightly so that it stays closed.

Place on a baking sheet and put in the oven for 22 minutes. At about 17 minutes, brush the melted butter over the top.

At about 20 minutes, keep a close eye on them, they should turn a nice golden brown. Remove, and they're ready!

Tips & Note

When the dough is finally ready, always dust your board or tray to avoid it sticking.
At 9, make sure to firmly stick the two ends together, because it won't look good if it opens while baking.
It looks nice if both ends of the sausage are visible, so don't cover completely.
