One-Pot Squid with Swede

An adaptation of Squid Mooli but we can't find proper mooli in the UK, so I used swede.

Ingredients

Squid 150-200g
Swede 1/2 (300-400g)
Mushrooms (shiitake, oyster) 40-50g
Water 100ml
Mirin 50ml
Light soy sauce 50ml
White wine 50ml
Sugar 1.5 tbsp

Method

Put some washed rice in a pan or rice cooker. Add enough water and leave for 30 minutes.

Add soy sauce and some honey into the water.

Boil the swede in a different pan and when it turns yellow, slice 3mm thick and add to the rice and water, together with the squid.

Tips & Note

●You could boil the squid in advance and let any unwanted substances rise to the top to be removed. This will look nicer in the cooked rice dish.
●When you buy the whole squid at the supermarket or fishmonger, you could ask 'Could you clean them (it), please?' and they might be able to remove the organs and the ink.
