Swordfish Steak With an Olive Sauce

Olives and swordfish make a great combination.

Ingredients

Swordfish fillets 2
Plain flour a little
Salt & pepper as required
Onion 1
Red pepper 1/2
Olives 15-20
White wine 50ml
Fish stock cube 1/2 in 200ml water

Method

Season the swordfish with salt & pepper and drizzle over some white wine. Finely slice the onion and cut the red pepper into thin strips.

Dredge the swordfish with the flour and pan fry in oil until lightly browned.

Add the onions and red peppers next to the swordfish and fry.

Drizzle more white wine and add the fish stock and olives. Cook for 10 minutes on a medium heat before serving.

Tips & Note

●Adding the olives and fish stock give the swordfish a fuller flavour.
●You can use chicken stock cubes if you don't have fish stock cubes.
