How to Make a Delicious Azuki Preserve

Ingredients

Organic azuki beans 250g
Golden caster sugar 225g (90% of the weight of the beans)
Sea salt a pinch
Water just over 1 litre

Method

Once it's boiled, drain in a colander. Repeat the process twice, then add 5-6 cups water.

Once it boils again, simmer for 40-60 minutes. Keep adding water as necessary.

The beans should be soft enough to be crushed between forefinger and thumb. Drain most of the water and put on a medium heat.

Add the sugar in a few batches and keep stirring with a wooden spoon.

Whilst stirring, when you see that the mixture at the bottom of the pan slowly fills in, then add the pinch of salt and turn the heat off. This should be exactly the right consistency when it cools down.

Wash the azuki beans lightly and put in a pan. Pour in enough water to cover and put n high hat to boil.

Tips & Note

If you want to use a pressure cooker instead, cook on a low heat for 17 minutes as soon as the pressure has built.
