Bracken Starch Dumpling (Warabimochi)

Ingredients

Tapioca starch 150g
Or arrowroot 125g
Golden caster sugar 30g
Water 450ml
Soya bean powder sugar:
Equal mix of golden caster sugar and soya bean powder

Method

Put all the ingredients apart from the soya bean powder sugar into a pan and whisk well.

Put on a medium heat and use a wooden spoon to stir. It will start to stick, but you need to keep stirring gently.

It will look white to start with, but will gradually become more translucent. it's ready when it becomes sticky.

Pour into a pound cake tray. Use cling film directly on the top to flatten and shape it nicely. Cool it down to room temperature.

Remove from the tray onto a chopping board and cut to suit. Sprinkle the soya bean powder sugar as much as you like.

Tips & Note

●You can cool it down in the pan if you wish but allow to cool thoroughly so that it removes easily from the pan or tray.
●You could use half water and half milk or coconut milk.
