Simmered Country Style Aubergine

Ingredients

Aubergine 1
Dried shrimps 15g
(Rehydrate in water)
Fine beans 1 handful
Light brown sugar 1 tbsp
Light soy sauce 2 tbsp
Dried chilli 1

Method

Chop the aubergine to bitesize pieces and cook in boiling water for 2-3 minutes.

In a pan, put the shrimps and the liquid from rehydrating them, and add brown sugar, dried chilli and aubergine. When it boils, add the soy sauce.

Simmer on a medium heat with the lid on. Add the fine beans when the aubergines are cooked.

Turn the heat off an add the sesame oil, it's now ready.

If you use baby aubergines, these can sometimes be bitter, so after scoring them, keep them in the water for a bit longer.
