Sweet Simmered Herring

You can put this on rice or on noodles.

Ingredients

Herring fillets 4
Sauce:
Dark brown sugar 2-3 tbsp
Light soy sauce 2.5 tbsp
Sake 2 tbsp

Method

Slice the herrings into half, score and rub salt into the skin side. Pat dry.

Boil the sauce in a pan and carefully place the herrings in it.

Put a smaller lid directly on top of the herrings, turn down to a low heat and cook for 15 minutes.

Remove the lid and turn the heat up high. Cook until the sauce is reduced. It's ready to serve.
