Salmon Sauteed with Pickled Onions

The pickled onion is great, so is the salmon, so they should be brilliant when put together!

Ingredients

Making the sliced onion pickle
Onion (medium) 1/2
Carrot (medium) 1/3
●Gherkins 2
●Noodle broth (mentsuyu) 2 tbsp
●Rice vinegar 6 tbsp
●Ponzu vinegar 2 tbsp
●Water 大さじ1
●Sugar 2 tbsp
●Sundried chilli as you like
Salmon fillets 2
Salt & pepper a little
Flour as required
Vegetable oil as required

Method

Season the salmon with salt and keep aside for 10 minutes.

Make the onion pickle. Finely slice the onions and cut the carrots into fine strips.

Put all the ●ingredients into a bowl (finely chop the gherkin). Mix together well and add Step 2, keep aside for 30 minutes.

Slice the salmon into 5 pieces each and dredge with the flour.

Heat the oil in a frying pan and fry the salmon on a medium heat for 2 minutes on both sides. Turn off the heat and allow to continue cooking on residual heat.

Cool the salmon and add to Step 3 to marinate.

After marinating in the sauce for 30 minutes, it's ready to serve.

Tips & Note

If you sautee the salmon in butter, the aroma of the butter and the vinegar is not that pleasant, so it's better to use vegetable oil.
