Pork Chops With Wasabi Pickle

Ingredients

Pork loin (thinly sliced) 4
Wasabi 15g
Pickled gherkins 2 large or 4 small
Sake 1/2 cup
Light soy sauce 3 tbsp
Vinegar 2 tbsp
Ketchup 4 tbsp
Water 3 tbsp
Vegetable oil as required
Flour as required
Salt & pepper as required

Method

Remove the fibres from the pork loin. Season with salt & pepper. Finely chop the pickled gherkins.

Put some oil in a frying pan and fry on both sides the pork dredged in flour on a medium high to high heat. Remove when nice and brown.

In the same frying pan, pour in the sake and burn off the alcohol. Add the gherkins, vinegar, soy sauce and ketchup.

Cook until the sauce reduces. Add the wasabi and stir well.

Return the pork back to the pan and coat with the sauce. It's ready to serve.

Tips & Note

●Add the wasabi when you turn the heat off otherwise the taste will disappear if the heat is still on.
●You can add extra wasabi on the side when you serve it.
