Deep Fried Prawns Wrapped In Sliced Bread

It's great fun to make and to eat - kids love this recipe!

Ingredients

Prawns, ready to eat peeled 80g
White sliced bread, medium thick 4 slices
Egg, hard boiled 1
Onion 1/2
Mayonnaise 2 tbsp
Salt & pepper 2 pinches each
Vegetable oil as required

Method

Wash the prawns and pat dry. Chop coarsely. Chop the onion and the white of the boiled egg.

Put 1 into a bowl and add the yolk, mashed. Add mayonnaise and salt & pepper and mix well.

Slice the crust off the bread and place in between 2 sheets of cling film. Roll flat with a rolling pin.

Remove top cling film and add 2 onto the bread slice, leaving 3cm empty along one edge. Using the bottom cling film, roll up to form a cigar shape with the filling inside.

Twist the ends like a sweet. The seam should be at the bottom. Put a light weight on top to seal the edges and leave for 5 minutes.

Heat some oil 170C and deep fry for 2-3 minutes, rolling all the while.

Drain off the oil well and cool down. Slice into 2 or 3 pieces and display on a dish. It's ready!

Tips & Note

As an option, you could put curry powder, ketchup or chopped pickles for an extra flavour.
If the filling leaks out from the bread, it could explode in the oil, so try to remove any air when rolling up.
