Celery Sorbet

It's a really trendy desert, and you'll never guess you're eating a salad vegetable!

Ingredients

Celery (leaves aswell if you like) 30g
Water 500ml
Sugar 75g
Lemon juice a little

Method

Put the water and sugar into a pan and allow to dissolve on medium heat. Allow to cool.

Remove the fibres from the celery and chop roughly. Add to the pan and blend to make it smooth. Allow to cool completely.

Pour into a freezer bag and secure. Put in the freezer until it's 70-80% frozen. Remove from the freezer and crush with a fork then return to the freezer. Repeat 2-3 times.

Tips & Note

Use a ziploc bag when you put in the freezer, this is easier to massage the contents so you may not need to use a fork to loosen the ice.
