Hot Cross Buns

This comes straight to mind when you say Easter!

Ingredients

Strong white flour 250g
Salt 0.5 tbsp
Mixed spice 2-3 tsp
Caster sugar 30g
Butter 25g
Dried yeast 1/2 sachet
Milk 100ml
Egg 1
Dried fruits (currants, peel) 100g
Flour 2 tbsp
Water as required
Golden syrup as required

Method

Sift the flour, sugar and spices into a large bowl.

Add the cold diced butter and mix with your fingertips to make like breadcrumbs. Add the dried fruits and yeast.

Mix together the warm milk and egg and pour into Step 2. Mix by cutting with a knife.

When the dough begins to firm up, transfer to a dusted wooden board and knead for 5 minutes.

Make into a ball shape and put back in the bowl.

Cover with cling film and leave the bowl in a warm place for 45 minutes-1.5 hours for the dough to double in size.

Transfer the dough to a dusted wooden board and punch out the air. Knead again for 5 minutes. Divide into 6 balls.

Place onto a baking tray and cover with cling film. Leave in a warm place for 45-60 minutes to double in size again.

Preheat the oven 210C (Gas mark 7). Put the flour and water into a small bowl and mix to make a glue.

Put Step 9 into a piping back or plastic bag with the point cut off and pipe a cross onto each bun.

Bake the buns for 12 minutes. Remove from the oven.

Brush heated golden syrup onto each bun and allow to cool. They're ready!
