Warm Leek Salad with an Olive Dressing

Ingredients

Leeks 2
Cherry tomatoes (diced) 2
Dressing
Olives (finely chopped) 5
Parsley (finely chopped) 1 tbsp
Garlic (finely chopped) 1 clove
Wholegrain mustard 1 tbsp
Your favourite nuts (roasted and finely chopped) 1 tbsp
White wine vinegar 1 tbsp
Olive oil 1 tbsp
Stock 1 tbsp
Salt & pepper as required

Method

Cut the leeks into 7cm pieces and into half lengthways. Mix all the dressing ingredients.

Lightly boil the leeks.

Drain well and arrange onto a large flat plate. Pour the dressing over the leeks and sprinkle with the small diced tomato.
