Pork Meatball Hotpot

Ingredients

Chinese leaves bunch 1/2
Leek 1
Shiitake mushrooms 4
Tofu 1
Water 1.5 litres
Dashi granules 3 tbsp
Carrot for garnish as required
Meatballs:
Minced pork 400g
Spring onions 5
Ginger 2 thumbs
Miso 75g
Egg 1

Method

Mix all the meatball ingredients in a bowl and knead by hand. Make into meatballs. Cut the tofu and vegetables into bitesize pieces.

Put the meatballs, vegetables, tofu and water into a hotpot. Sprinkle the dashi granules and put the lid on then turn the heat on.

Bring to the boil and remove any scum. It's ready when the meatballs are cooked and the vegetables are soft.

Tips & Note

●Put the meatballs into the hotpot in 2-3 lots, not all at one go.
●The hotpot will work with any vegetables so use any that you have in the fridge.
●You can add some cooked rice at the end to make a loose risotto, if you like.
