Skate Simmered in Japanese Sauce

A very traditional Japanese dish that goes well with some sake.

Ingredients

Skate wings (small) 2
Dashi broth 200ml
Soy sauce 3.5 tbsp
Sake 3 tbsp
Sugar 1.5 tbsp
Mirin 1.5 tbsp

Method

Put the dashi broth, 2.5 tbsp soy sauce, sake and sugar into a pan and bring to the boil.

Turn the heat to medium, then put in the skate.

Put some kitchen paper directly on top to act as a lid and simmer for 12-13 minutes. Baste the fish by occasionally pouring some of the sauce on top of the kitchen paper.

Remove the kitchen paper and add the mirin and soy sauce (1 tbsp each). Simmer again for 2-3 minutes.

Garnish with finely chopped parsley to serve. It's now ready.

Tips & Note

●Choose skate wings the right size to fit in the pan.
●You can turn the skate over if you want, so that it absorbs more sauce.
●You can use this recipe for cod as well.
