Fennel & Cod Gratin

You don't need to make a white sauce.

Ingredients

Fennel bulb 1
Onion 1
White fish fillets (such as cod) 2
Olive oil as required
Flour 3 heaped tbsp
Milk 200ml
Salt as required
Pepper as required
Stock granules 2 tsp
Short pasta 200g
Parsley as required
Cheddar cheese as required

Method

Put the olive oil in a frying pan. Dredge the cod with flour and lightly saute. Remove when cooked.

In the same pan, add the finely sliced onion and fennel and cook until soft.

Add the flour and stock to Step 2. Add the milk a bit at a time and keep stirring.

Adjust for seasoning with salt & pepper.If the sauce is too thick, add some water and stir.

Add the cooked pasta and finely chopped parsley into Step 4 and transfer to an oven dish. Add the cod and flake gently while stirring.

Sprinkle with lots of grated cheese, then put in the oven 220C for 15-20 minutes.

Tips & Note

Fry the onion well, this will give the dish more sweetness.
At Step 3, add the flour evenly and keep stirring with the milk to avoid lumps.
