Blueberry Cupcake

Use lots of blueberries, they pop deliciously in your mouth!

Ingredients

Butter 160g
Granulated sugar 160g
Eggs (medium) 4
Flour 240g
Baking powder 2 tsp
Milk 30ml
Dried blueberries 100g

Method

Soak the blueberries in some apple juice to rehydrate.

Put the eggs in bowl and add the granulated sugar. Whisk until it becomes white.

In a separate bowl, whisk the room temperature butter until creamy.

Add Step 2 into Step 3 a bit at a time, mixing to combine each time. Add the milk and mix again.

Sift the flour and baking powder into Step 4 and lightly mix with a wooden spoon or spatula. Don't incorporate all the flour.

Add the blueberries and apple juice to Step 5 and mix well.

Pour into cupcake paper cases 80% full.

Put into a preheated oven 180C for 20 minutes. Turn round once during the baking to get an even colour.

Enjoy when it's cooled down a little.

Tips & Note

This recipe is based on a butterfly cupcake recipe, but slightly modified.
Because this recipe uses lots of eggs, it's better to do Steps 2 and 3 separately otherwise it could split.
