Sausages and Vegetables in a Simple Gravy

A nice hearty dish to warm you up.

Ingredients

Your favourite sausages 6
Potatoes (medium) 4
Carrot (medium) 1
Parsnip 1
Gravy:
Vegetable oil 1 tbsp
Onion (large) 1/2
Green pepper 1/4
Green beans 8-10
Tomato (medium) 1
Soy sauce 2 tbsp
Mirin 2 tbsp
Chicken stock cube 1/2
Pork stock cube 1/2
Tomato ketchup 2 tbsp
Potato starch in a bit of water 1 tbsp

Method

Peel the parsnip, carrot and potatoes and chop to bitesize pieces. Microwave for 3-5 minutes.

Put the oil in a frying pan on medium heat and fry the sausages. When browned, put the lid on and steam cook on low heat for 15-20 minutes.

Make an instant gravy: put the oil in a different frying pan and add all the roughly chopped raw vegetables, the tomato should be last.

Add all the seasoning ingredients from the soy sauce to the ketchup and simmer to reduce. When it's half reduced, add the potato starch to thicken.

Add Step 1 to the pan of sausages (Step 2) and fry for a short while.

Transfer to a dish and pour over the gravy from Step 4.

Tips & Note

You can use any vegetables you like, it's handy when you want to clear out the fridge.
