Bread & Butter Pudding with Apple

It's a really typical British pudding, with added apple.

Ingredients

Apple 1
Raisins 2 tbsp
Orange zest 1/2 orange
Orange juice 1-2 tbsp
Brown sugar 1 tbsp
Cinnamon 1/2 tsp
Apple preserve or apple jelly as required
White bread slices 6
Butter 5 tbsp
Milk 500ml
Double cream 2 tbsp
Eggs 2
Vanilla extract 2-3 drops
Butter on top as required
Demerara sugar on top as required
Toffee sauce or golden syrup as required

Method

Peel the apples and remove the core and chop into small dice. Mix with the raisins and finely chopped orange zest (if you like).

Put the orange juice, brown sugar and cinnamon in a bowl, mix with the apple and leave for 20 minutes.

Spread the bread with butter and the apple preserve. Cut into triangles.

Spread some butter on a baking dish and place the bread, piling them up. Between the slices, fill in with Step 2.

Put the egg, milk, cream and vanilla extract in a bowl and stir well.

Pour Step 5 over Step 4 and leave to soak for 10 minutes.

Add knobs of butter and the demerara sugar over the top and cook in a preheated over 180C (gas mark 4) for 45 minutes.

You can enjoy with warm toffee sauce or golden syrup if you like.

Tips & Note

●It's better to use a slightly stale bread rather than a fresh one.
●At Step 3, it looks nicer if you place the slices in a mirror image.
●Before pouring over Step 5, sieve it first to give a smoother texture.
