Nice And Moist Banana Cake

I was taught this recipe by my friend.

Ingredients

Ripe bananas 2
Flour 150g
Baking powder 5g
Sugar 60g
Butter 70g
Eggs 2

Method

Use room temperature butter in a bowl and whisk to incorporate air. If it's too cold from the fridge, put in the microwave (300W) for 30-45 seconds.

Add sugar and the eggs and whisk.

Mash the bananas with a fork

Add the bananas to Step 2.

Sieve the flour and baking powder into the bowl and gently fold the mixture.

Put in a baking tin into a pre-heated oven 180C for 50 minutes.

Tips & Note

The eggs should also be at room temperature as this will give a lighter feel to the cake.
