Mexican Beef and Lettuce Rice Sandwich (Onigirazu)

A simple recipe using chilli con carne seasoning.

Ingredients

Minced beef 40-50g
Salt a pinch
Chili con carne seasoning 1 tsp
Vegetable oil 1 tsp
Lettuce 1 tbsp
Cheese slice 1
Cooked rice 100-110g
Nori sheet 1
Salt for the rice a pinch

Method

Season the beef with salt and add to a frying pan with the vegetable oil on medium heat.

When the meat is browned and separate, add the chilli con carne seasoning.

Fry well to absorb the flavour. Turn the heat off and remove to a plate.

Place some cling film on a chopping board and lay the nori sheet on top in a diamond shape.

Sprinkle the salt onto the cooked rice and mix. Spread half the rice on the nori sheet in the centre and top with the minced beef.

Add the shredded lettuce on top.

Cover with the remaining rice, then the sliced cheese on top.

Fold up the top and bottom corners of the nori sheet (with the cling film) into the centre, pressing firmly.

Repeat with the left and right corners and press firmly to secure.

Wait for 4-5 minutes then cut in half with a wet sharp knife.

Remove the cling film and serve.

Tips & Note

●Don't overfill otherwise the nori sheet won't stretch to cover and stick
●Add more chilli con carne seasoning if you prefer it quite spicy
