Hijiki Seaweed Tortilla

Adding lots of hijiki seaweed into a Spanish tortilla omelette makes it a simple, healthy and nutritious dish.

Ingredients

Eggs 3
Hijiki seaweed (dried) a handful

Method

Crack the eggs into a bowl and beat. Don't add anything else as the hijiki is full of flavour.

Add the seaweed to the eggs and fry in a frying pan with a little vegetable oil on medium heat.

When the bottom is cooked, turn over. When both sides are nicely browned, remove to a serving dish.

Tips & Note

Turning it over can be simple if you are confident to flip it. Otherwise, place a large flat board or plate on top of the frying pan and turn it over, then slide the omelette back in to cook the other side.
