Ingredients

Spaghetti 100-120g
Salf 1% of pasta water
Asparagus 10-12
baby tomatoes
Pancetta(or Bacon) 2 tbsp
Garlic 1 clove
Olive oil 2 tbsp
Butter 1 tsp
Black Pepper as you like

Method

Boil asparagus for 1&1/2 minutes and cut into thirds. The lower third is for seasoning. Start boiling the pasta. Boil pasta for 1 minute less than indicated on the package.

Heat olive oil, butter, bottom third of asparagus, garlic slices, and pancetta in a frying pan over medium heat.

When the pancetta becomes crispy, mash the asparagus with tongs or a spatula to release the flavor inside.

Add a ladle or two of the pasta water and emulsify. Remove the asparagus

Add the cherry tomatoes and the top two part of asparagus. crush the cherry tomatoes with tongs to release their juices.

Add the cooked pasta, Mix well for 1 minute.

Toss the pasta . Allow the pasta to air dry. Place on a plate and sprinkle with black pepper.
