Ingredients

Butter 50g
Granulated sugar 100g
Eggs 2
Self raising flour 100g
Branston pickle 5 tbsp

Method

Put the butter in a bowl and microwave for 30 seconds. Stir, then add the sugar and mix well.

Add the 2 eggs and mix well. Sieve in the flour and mix again, but don't overmix otherwise it will be heavy with overdeveloped gluten.

Add the Branston pickle and mix gently to incorporate evenly. Pour into a 19cm diameter cake tin.

Bake in a preheated oven (180℃) for 15-16 minutes. It will finish cooking as it cools to room temperature.

Tips & Note

It looks and feels as if you are making a sweet dish. But it's not! But don't worry, it won't be too sour with the pickle as its acidity halves as it bakes. It has an unexpectedly addictive taste.
