Stem Broccoli Yogurt Pancakes

Ideal for a weekend brunch.

Ingredients

Stem Broccoli 100g (1/2 pack)
Egg 1
Milk 80ml
Plain yogurt 50ml
Self raising flour 100g
Caster sugar 1 tbsp
Salt 1/4 tsp
Cheddar cheese 2 tbsp
Vegetable oil 1 tsp

Method

Slice the stalks of the stem broccoli lengthways then into 3cm pieces.

Put the egg, sugar, salt, milk and yogurt into a bowl and whisk.

Sift the flour into the bowl and mix with a spatula. Add the cheese and cut broccoli.

Heat a frying pan on low. Cool it slightly by placing the pan onto a damp cloth. Put some oil in the pan.

Spread out the oil around the base of the pan with kitchen paper. Pour half the mix from Step 3 into the pan and fry on low heat for 5 minutes. Turn over when bubbles appear.

Fry for a further 3 minutes. Repeat with the other half of the mix. Serve sliced as you like, with ketchup and eat hot.

Tips & Note

●The stem broccoli stalk is soft and has very small florets, so use this without boiling it in this recipe.
●If you put a lid on, the pancake will cook faster.
