Refreshing Red Cabbage Jelly Drink

Ingredients

Red cabbage (grated) 1 tbsp
Sugar 1 tsp
Gelatin sheets 2
Hot water 180ml
Lemon 1/2

Method

Grate the red cabbage with a fine grater and mix with the sugar.

It will soften in about 5 minutes. Squeeze in a cloth to extract the juice.

Soak the gelatin sheets in some water for about 5 minutes, then put the softened gelatin in a bowl and pour in the hot water to dissolve it.

Add the cabbage juice from Step 2 and the lemon juice, then the sugar and dissolve it. When it's hand hot, transfer to a flat tray and put in the fridge for 2~3 hours.

Once solidified, use a spoon to scoop it up into a glass. Add some lemonade and ice and decorate with slices of lime.

Tips & Note

● The secret of the beautiful pink colour comes from the lemon juice at Step 4. If you make it with your children, you're sure to get a cheer!
● I would recommended to serve this with a thick straw such as for drinking bubble tea with tapioca that you see in Chinatown. You'll get a lovely jelly texture.
