Super Delicious Spaghetti with Tinned Sardines

Ingredients

Tinned sardines in spicy tomato sauce 1
Olive oil 2 tbsp
Garlic 1 clove
Shallot 1/2
Chicken stock cube 1
Spaghetti 100-120g
Black olives 6
Capers 1 tsp
Dried chilli 1
Parsley / Parmesan as you like

Method

This is the tinned sardines in spicy tomato sauce, it's not bad.

In the hot water for boiling the spaghetti, put a chicken stock cube instead of salt for a good savoury flavour. This pasta water will be part of the pasta sauce.

Put the olive oil in a frying pan and add the smashed garlic and chopped shallot on medium heat.

Once softened, add the dried chilli, sliced olives and capers and stir fry for 1 minute. Pour in 2.5 ladles of the pasta water.

Add the sardines after the pasta water to avoid any oil splashes and turn the heat up to high.

Add the cooked pasta to the frying pan and mix well with the sauce for 1 minute to emulsify.

Sprinkle with the finely chopped parsley and grated parmesan. Enjoy!
