How to Cook Sausage Meatball Pasta with Branston Pickle Sauce

Ingredients

Pasta 100g
Chicken stock cube 1
Olive oil 3 tbsp
Garlic 2 cloves
Shallot 1/2
Sausages 2
Branston pickle 1.5 tbsp
Sliced cheese 1
Parsley (optional) as required

Method

Put the chicken stock cube instead of salt into plenty of hot water to boil the pasta. You'll use some of this water to make the delicious sauce.

Remove the skin from the sausages, divide the sausagemeat into five equal pieces and roll into meatballs.

Put the oil in a large frying pan and heat on medium. Add the smashed garlic and the meatballs (you can remove the browned garlic if you want).

Add the chopped shallot, then 3 ladles of pasta water.

Boil for a few minutes to reduce the sauce to about half, then add the Branston pickle and melt in a sliced cheese.

When the pasta is cooked, add it to the frying pan and mix with the sauce for 1 minute to emulsify and blend.

Transfer to a serving dish and garnish with the fresh parsely.
