Tomato Flavoured Macaroni Cheese (a Tesco Recipe)

I saw a recipe in Tesco for making a foolproof macaroni cheese, so I gave it a go. Like lasagne that tastes better the next day, this was certainly more delicious the day after. It's ideal to make for a party.

Ingredients

Macaroni 300g
Meat (chicken, bacon, meatballs, etc.) 300g
Vegetables (onion, broccoli, etc.) 1 cup
Olive oil or butter 1 tbsp
Garlic 1 or 2 cloves
Tinned tomatoes (chopped) 2
Mascarpone cheese 250g
Hard cheese (Cheddar, Red Leicester, etc.) 100g+

Method

Boil the pasta, adding the broccoli in for the last 2 minutes of cooking.

Drain the pasta and put into an oven dish. Add the mascarpone cheese to the hot pasta and mix evenly.

Put the olive oil or butter into a pan, and fry the bitesize pieces of meat and vegetables, and the finely chopped garlic on high heat. This time I used chicken, bacon and onion.

When the meat and vegetables are nicely browned, add the tinned tomatoes and simmer for 5 minutes. If you like a deep flavour, add a chicken stock cube (optional).

Pour the tomato sauce from Step 4 onto the pasta in Step 2 and mix well. Grate the hard cheese and sprinkle on top.

Cover with foil and put into a preheated oven 170℃ and bake for 10 minutes. Remove the foil and bake for a further 5 minutes. When the top is nice and golden, it's ready.

Tips & Note

Macaroni, or any short pasta looks appetising when you have other ingredients mixed in. Tesco's original recipe uses spinach and cooked bacon but I think you can use whatever you like. The flavours all mixed well together when we had it the next day, so I would suggest making this dish the day before a party and heating it up again.
