Peri Peri Pasta with Pickles, Mushroom & Bacon

Ingredients

Pasta for 2 people
Takana pickles (or jalapenos) 2 heaped tbsp
Mushrooms (such as eringi) as required
Bacon rashers 2-3
Garlic 1 clove
Olive oil 2 tbsp
Soy sauce 1 tbsp
Bonito flakes pack 1
Sesame oil & chilli oil as you like

Method

Here are the ingredients. Add salt to boiling water and cook the pasta for 1 minute less than the pack instructions.

In the meantime, fry the chopped mushrooms and bacon on medium heat in a pan. Add the finely chopped garlic.

Add the finely chopped takana pickles, olive oil, soy sauce and one ladle of pasta water and mix well.

Add the cooked pasta and mix well before transferring to a serving dish. Drizzle either sesame oil or chilli oil, sprinkle with the bonito flakes and serve.

Tips & Note

The heat comes from the takana pickles or jalapenos and the chilli oil, so adjust to your preference.
