Avocado & Chicken Pasta

Roast chicken and avocado is a dream in sandwiches, it also works well with pasta.

Ingredients

Pasta for 2 people
Ripe avocado 1
Roast chicken 100g
Vegetable stock granules 1 tsp
Soy sauce 1 tsp
Single cream 50ml
Pasta water 1 ladle
Salt & pepper as you like

Method

Cook the pasta. In the meantime, mash half of the avocado with the back of a fork and mix with the vegetable stock granules, single cream, soy sauce and the pasta water.

Chop the chicken and remaining avocado into bitesize pieces. Mix with the cooked pasta and the sauce from Step 1. Season with salt & pepper before serving.

Tips & Note

Add more cream and some grated cheese for a greater depth of flavour. If you prefer a lower calorie recipe, use less cream. I used ready roast chicken this time, but you can fry raw chicken beforehand. Always use a ripe avocado.
