Delicious Spaghetti with Mushrooms in a Japanese Sauce

The 'Asian Selection' sold at Tesco is a fantastic assortment of eringi, shimeji and enoki mushrooms, they're not bad for £1.50 (2017 price).

Ingredients

Asian Selection mushrooms 1 pack
Bacon rashers 2
Olive oil 2 tbsp
Garlic 1
Dried chilli 1
Kombu tea powder 1 tsp
Noodle broth (mentsuyu) 1-1.5 tbsp
Butter 20g
Spaghetti 200g
Salt for pasta water 1-1.5% of water
Parsley as required

Method

This is the Asian selection of mushrooms.

Boil the spaghetti as indicated on the packet. Use enough salt (1-1.5% of the volume of hot water, for example, 10g salt in 1 litre water). Chop the bacon into small bitesize pieces. Smash the garlic.

Put the olive oil in a large frying pan and add the garlic and bacon and fry on medium heat. When the bacon is crispy, add the mushrooms and fry.

Remove the smashed garlic.When the mushrooms are browned, add 2 ladles of pasta water, the kombu tea powder and noodle broth and mix. After 1 minute turn the heat off and wait for the pasta to be cooked.

Drain the cooked pasta and add to the frying pan. Add the butter on top and mix well with the sauce for 1 minute on medium heat.

Sprinkle with the finely chopped fresh parsley.
