Sweet Swede & Miso Patty

The poor old swede is made into a wonderful sweet ingredient in these delicious patties!

Ingredients

Swede (medium) 1/2
Flour same amount as grated swede
Miso (red) 1.5 tbsp

Method

This is a swede, also called rutabaga.

Peel and grate the swede. It's quite hard so microwave for 3-4 minutes first to soften. Or use a food processor without microwaving it.

There is almost no moisture in a swede so pat dry lightly. Put in bowl and add the same amount of flour.

Add the miso paste (with dashi). If the miso doesn't have dashi in it, add some dashi granules. Mix all the ingredients together thoroughly.

Make small meatball shapes with the mixture then flatten to make patties. Put some oil in a frying pan and fry on medium heat.

Turn over after 2.5 minutes and fry again for 2.5 minutes until nice and golden.

Tips & Note

I normally use a swede for chopping up and adding to meat or vegetable stews but I wondered one day whether I could find a recipe to really make the sweet swede a star.
