Ingredients

Chicken breast fillet 1
Onion 1/2
Spring onion 1
Eggs 2
Dashi stock 100ml
Soy sauce 2 tbsp
Mirin 2 tbsp
Cooked rice for 1
Nori sheet as required

Method

Cut the chicken to small bitesize pieces. Slice the onion, and the spring onion diagonally.

Put the dashi stock, soy sauce, mirin, chicken and onions in a pan and cook for 5 minutes on medium heat. Add the spring onions.

Simmer for 3 minutes then swirl in half of the lightly beaten egg (when beating the eggs, just mix lightly with a fork or chopsticks about 8 times).

Put the lid on and count 10 seconds, then swirl in the remaining eggs and simmer for 3 minutes.

Transfer onto the cooked rice in a large bowl and sprinkle with the crushed nori sheet and enjoy!
