Daikon and Wakame Seaweed Miso Soup with Fried Tofu

Daikon and wakame make a delicious miso soup. So does daikon and fried tofu. It's doubly delicious if you combine both these popular recipes.

Ingredients

Daikon (mooli) 10-15cm
Dried wakame seaweed 2 tbsp
Deep fried tofu (aburaage) 1
Dashi stock granules 1/2 tsp
Hot water 600ml
Miso 35-40g
Spring onion 1/2

Method

Peel and cut the daikon into fine strips. Wash the deep fried tofu under running hot water to remove excess oil and pat dry. Cut into shreds. Rehydrate the dried wakame in hot water.

Boil the hot water in a pan and add the daikon and dashi stock. Boil for 3 minutes then turn the heat down to medium and dissolve in the miso. Add the shredded fried tofu and cook for 1 minute.

Finally add the wakame seaweed and cook for a further minute on low heat. Pour into a bowl or soup dish and sprinkle with the finely chopped spring onion.
