Spicy tuna with stir fried cucumber

It's quite a rare thing to cook cucumber, but Chinese cookery has so many recipes that use cooked cucumber!

Ingredients

Cucumber 10cm
Red pepper 1/4
Tinned tuna in sunflower oil (small) 1
Garlic 1 clove
Ginger 1 thumb
Chinese chilli bean sauce (Tobanjan) 1.5 tbsp
Sugar 1 tsp
Sesame seeds 1 tsp

Method

Here is what you need.

Smash the cucumber using the side of a knife or a rolling pin. Then cut into bitesize pieces.

Dice the red pepper into 1cm squares.

Add 1 tbsp of oil from the tinned tuna into a frying pan.

Add the red pepper, finely chopped garlic & ginger, and stir fry on medium heat. After 1 minute, add the chilli bean sauce and sugar and mix well.

Add the tuna and stir fry for 1 minute. Watch out for hot oil splashes!

Add the cucumber and stir fry for 2 minutes. Job done.

Transfer to a serving dish, sprinkle with the sesame seeds and enjoy!
