Classic Japanese Daikon Miso Soup with Fried Tofu

Ingredients

Daikon radish (mooli) 10-15 cm
Deep fried tofu (aburaage) 1
Hot water 600ml
Dashi stock granules 1/2 tsp
Miso 35-40g
Spring onion 1/2

Method

Peel the daikon and cut into fine strips.

Put the hot water in a pan and boil. Add the daikon and dashi stock and simmer for 3 minutes on high heat. Wash the deep fried tofu under running hot water to remove excess oil, then pat dry and cut into fine strips.

Once the radish has cooked, turn down the heat to medium and dissolve in the miso. Add the fried tofu and turn off the heat, it will warm through on residual heat.

Transfer to a soup bowl and sprinkle with the finely chopped spring onions. Enjoy!
