Tofu Arrabbiata

I used a healthy tofu with an Italian sauce...it is heaven!

Ingredients

Tofu (firm) 1
Potato starch or cornflour as required
Salt & pepper as required
Olive oil as required
Bacon rashers (or pancetta) 2 (50g)
Garlic 1 clove
Dried chillis 2
Tinned tomatoes (220g) 1
Capers 2 tbsp

Method

Weigh down the tofu for 5 minutes to remove water then pat dry on kitchen paper. Cut the tofu in half across before cutting into thick strips. Season with salt & pepper.

Dredge with the cornflour and fry in a frying pan with 2 tbsp olive oil for 6 minutes until nicely brown all over. Remove to a dish.

In the same pan, clean lightly then add a touch more oil and fry the diced bacon and smashed garlic on medium heat until the bacon is crispy.

Add the tinned tomatoes and dried ripped chillis (deseed if you like). Add 3 ladles of water then return the tofu to the pan.

Reduce the sauce to 1/3. Add the capers and cook for 2 minutes. Transfer to a serving dish.

You can sprinkle with chopped parsley or grated cheese if you like.

Tips & Note

Make the bacon nice and crispy - this is essential to get a lovely flavour from its oil to make a great tasting dish. Without this, the sauce will be pale and uninteresting tomato sauce.
