Teriyaki Tofu Chunks with Green Laver

A most delicious combination of tofu and teriyaki but with added green laver.

Ingredients

Tofu (firm or soft) 1
Potato starch as required
Vegetable oil 1 tbsp
Butter 1 tsp
Soy sauce 2 tbsp
Sake or white wine 2 tbsp
Mirin 2 tbsp
Sugar 2 tbsp
Green laver as required

Method

Put the tofu on a plate and cover with another flat plate and weigh down with a bowlful of water. Keep for 10 minutes to allow excess water to drain away.

Slice the tofu into half across then into bitesize pieces. Dredge with the potato starch and fry in a pan with the oil on medium heat.

Fry for 3 minutes on both sides until lightly browned then add the butter.

Mix the soy sauce, mirin, sake and sugar in a small bowl before pouring over the tofu. Cook for 3 minutes to reduce the sauce.

Allow the alcohol to burn off then reduce the sauce by half. Turn the heat off and sprinkle with lots of green laver before serving.
