Ingredients

Cod fillets 2
Salt & pepper as required
Carrot (small) 1/2
Cherry tomatoes 4
Mushrooms (shimeji, enoki or ordinary) as required
Spring onions 2
White wine 4 tbsp
Thyme two pinches
Rosemary two pinches
Butter 2 tsp
Soy sauce 4 tsp
Salt (Maldon) two pinches
Olive oil 2 tsp
Lime juice 2 tsp

Method

The quantities shown above should be split between the two portions. Here are the ingredients. Season the cod with salt & pepper. I bought this Asian Collection mushrooms from Tesco.

Keep the cherry tomatoes and mushrooms whole. Cut the carrots into fine strips and the spring onions into 5cm diagonal pieces.

Scrunch up some foil without tearing it, then open out. Place the cod and mushrooms and vegetables on the foil.

Drizzle the soy sauce, sprinkle with the thyme and rosemary then top with the butter. Pour in the white wine then close the foil parcels firmly securing at the sides and top.

Bake in a preheated oven 200C for 15-20 minutes. Open the foil and squeeze in the lime. You can enjoy as it is in the foil or transfer to a serving dish.

Tips & Note

You could use fish sauce (nam pla) instead of the soy sauce for a more Asian flavour. If it seems not salty enough, just add a touch more or drizzle some soy sauce.
