Summer Sunshine Sauteed Chicken with a Tomato & Lemon Salsa

Ingredients

Chicken thighs 4
Salt & pepper as required
Olive oil 2 tbsp
Ripe tomatoes 60g
Lemon 1
Salt & pepper a pinch each
Olive oil 2 tbsp
Parsley 2 tbsp

Method

Remove the bones from the chicken thighs and season with the salt & pepper on both sides. Keep aside for 5 minutes.

Put 2 tbsp olive oil in a frying pan and add the chicken skin side down and fry for 7 to 8 minutes on medium heat.

Make the salsa separately. Cut the tomatoes and lemon into 5mm dice and put in a bowl with the salt & pepper, chopped parsley and olive oil and mix gently.

Turn the chicken over once the skin is nicely browned and crispy, then fry for another 4 minutes. Transfer to a serving dish and add the summer salsa from Step 3.
