Deep and Delicious Anchovy Pasta

Add some anchovy to aglio, olio e peperoncino, and it will be a very rich and tasty pasta dish.

Ingredients

Olive oil 3 tbsp
Garlic 2 cloves
Dried chilli 1
Anchovy fillets 4-5
Salt for pasta water 1% of water
Spaghetti 100-120g

Method

These are the only ingredients that you need for a good flavour, once you use olive oil and pasta water.

Start boiling the pasta. As anchovies are quite salty, add salt about 1% of the amount of water (about 10g to one litre water).

Add the olive oil to a large frying pan and heat. Fry the sliced garlic on medium heat and after a minute add the deseeded dried chilli.

Add the anchovy fillets and fry for 30 seconds.

Just before the garlic starts to burn, add 3 ladles of pasta water and cook on high heat to reduce the sauce.

When the pasta is cooked, drain off the water and add into the frying pan. Mix the sauce and pasta together for 1 minute on medium heat to emulsify the oil and water.

The sauce will be well mixed (emulsified) when it thickens and looks creamy.
