Chicken & Parma Ham Involtini

Looks like a dish you'd order in a restaurant, but it's so simple to make!

Ingredients

Chicken breast fillet 1 (150g)
Salt & pepper as required
Baby spinach leaves 10-12
Carrot batons 2
Green beans 3-4
Parma ham slices 3
Olive oil 1 tsp
Tomato sauce (shop bought) 2 tbsp

Method

Slice the chicken breast almost in half (to make two thin joined slices) then tenderise between greaseproof paper sheets to make them very thin.

Put two layers of cling film on the chopping board and put the thinned open chicken breast on top. Top with the spinach leaves then add the carrot batons (5mm x 10cm long) and green beans - these should be cooked first in the microwave for 1 minute.

Roll up the chicken tightly upwards and secure with both cling film pieces at each end, like a sweet. Put into boiling water for 15-20 minutes.

Allow to cool, remove the cling film and wrap the chicken around with the parma ham. Put 1 tsp olive oil in a frying pan and fry on medium heat for 1 minute.

Turn occasionally to cook evenly. Slice with a sharp knife and transfer to a serving dish then pour over the tomato sauce - it's ready!
