Tuna & Leek Pasta

If you have any leeks left over in the fridge, you should try this for sure!

Ingredients

Leeks 2
Cherry tomatoes 10
Garlic 1.5 cloves
Dried chilli 1
Tinned tuna (in sunflower oil) 1 (85g)
Butter 1/2 tsp
Salt for pasta as required
Spaghetti 200-240g
Parmigiano reggiano plenty

Method

Roughly chop the leeks and smash one garlic clove. Finely chop the half clove. Start cooking the pasta - use 10-15g salt per litre of water.

Put the olive oil in a frying pan on medium heat and add the smashed garlic. Add the leeks and fry.

Remove the smashed garlic when the leeks are browned and add the tuna and its oil. Add the deseeded and crumbled dried chilli, the finely chopped garlic and the butter.

Add two ladles of pasta water and reduce the sauce. Add the tomatoes.

Shake the pan to emulsify the oil and pasta water. Add more pasta water if the sauce has reduced too much.

Add the cooked pasta to the frying pan and mix well to combine for 1 minute.

Transfer to a serving dish and sprinkle as much Parmigiano reggiano as you like.

Tips & Note

Leeks are so sweet and delicious when cooked, this works well with the sourness of the tomatoes.
