Whole Roasted Red Onions

Simply roast in the oven and top with cheese, bacon and garlic to get a wonderful result!

Ingredients

Red onions 4
Salt a little
Pepper a little
Olive oil 6 tbsp
Bacon rashers 3-4 (65g)
Garlic 2 cloves
Cheese 4 tbsp
Dried chilli 1/2 tsp

Method

Preheat the oven 190C.

Remove the top and bottom of the red onions.

Cut a deep cross to half way down and remove one layer of the top section peel.

Put some foil on an oven tray and add the onions. Drizzle 1 tbsp olive oil on each onion to coat thoroughly.

Sprinkle lightly with the salt & pepper and roast for 50 minutes.

Finely chop the streaky bacon and finely slice the garlic.

Put the remaining 2 tbsp olive oil in a pan on medium heat. Add the garlic and fry until nice and crisp then remove to a plate.

Add the bacon to the pan with the crumbled dried chilli and remove when nice and crispy.

Sprinkle 1 tbsp cheese on top of each onion and roast for a further 5 minutes.

Remove from the oven and sprinkle the onions with the bacon and garlic chips before serving.

Tips & Note

●Don't score the onions too deeply at Step 3 otherwise they will collapse, half way down is sufficient
