Cod & Potato Gratin

If you want something hot but not heavy, give this a go - it's a light gratin to fill you up.

Ingredients

Onion (large) 1
Finely chopped garlic (if you like) 1 clove
Potatoes 2
Cod (chopped) 200-300g
Flour as required
Olive oil as required
Salt & pepper as required
Chicken stock 200ml
Double cream 80-100ml
White wine 2 tbsp
Your favourite grated cheese as required
Lemon (for garnish) as required

Method

Put the olive oil in a frying pan and add the sliced onion. Stir-fry until golden brown. Remove to a gratin dish.

Boil the chopped potatoes until soft. Drain well.

Cut the cod into large chunks, sprinkle with salt & pepper and dredge with the flour. Shake off any excess.

Using the same frying pan, stir-fry the potatoes until golden brown.

Add the cod and fry until browned. Remove the potatoes and cod into a gratin dish.

Mix the chicken stock, cream, white wine and salt & pepper in a bowl. Pour this into the gratin dish to cover 80% of the cod and potatoes.

Sprinkle the grated cheese on the top and put into a hot oven 180C for 20 minutes.

Serve with a slice of lemon alongside as a garnish, as this can add a bit more flavour to the mild gratin.

Tips & Note

If you like garlic, add it at Step 1. You can adjust the amount of chicken stock and cream to your taste.
